500g chestnuts - pre-cooked

2 tbsp powdered sugar

800 ml vegetable broth

200g plant based cream

salt, red pepper

truffle oil

For garnish: 

freshly chopped parsley

Truffle & roasted chestnut smell

Winter time calls for yummy soups. This one is super easy to make and also done pretty fast, in case you‘re already hungry. Besides the chestnuts the truffle flavor of this dish makes me crave it every time even thinking about it. And it will also make your kitchen smell like heaven for quite a while! This is a true soul food for me.

Instructions:

  1. Sift the powdered sugar into a large pot and caramelize it.
  2. Add the vegetable broth.
  3. Add the chestnuts and make sure they are broken up into small pieces.
  4. Let the soup simmer just below the boiling temperature for about 20 minutes.
  5. Check if the chestnuts are soft - if not let it simmer for a little longer.
  6. Blend the soup with a hand-held blender.

  1. Add the cream and blend together again.
  2. Season the soup with salt and pepper to your liking.
  3. Add a few drops of truffle oil - taste and add some more until it's perfect.
  4. Blend everything again.
  5. Fill the soup into pre-heated bowls and garnish with parsley.
  6. Enjoy!

This soup is pretty filling and high in carbs, however I still like to have some Baguette with it. That tastes best when you roast it just a little right before serving.

Enjoy this warming meal with a good glass of red wine either as a main dish or include it into a fancy three or four course menu. It‘s quite the perfect match for a Christmas dinner party!
