For the eggs:

4 eggs

a handful of cocktail tomatoes

freshly chopped parsley

milk - plant based

salt, pepper, paprika powder

4 tbsp oats

1 tbsp cocoa powder

2 bananas

100 ml soy milk

50 ml water

Sweet and savory breakfast goodies

Eggs and oatmeal for breakfast. Who hasn't tried that before? But adding some tomatoes to the eggs and cocoa and bananas to your oatmeal will make this so much better! The perfect mix of sweet and savory for a long stretched weekend breakfast or brunch.

Instructions:

  1. Cut the tomatoes in small cubes.
  2. Chop the parsley.
  3. Scramble the eggs and add some milk.
  4. Spice the eggs with salt, pepper and paprika powder.
  5. Cut the bananas into thin slices.
  6. Heat the oats with the cocoa powder, water and milk in a small pot.

  1. Add the bananas to the oatmeal when it has the right texture and let it simmer some more.
  2. Heat a pan and add the egg mixture.
  3. Add the tomatoes and half of the parsley.
  4. Scramble the eggs and add more salt or other spices to your liking.
  5. Serve the oatmeal in small bowls.
  6. Serve the eggs on a plate and top off with the rest of the parsley.
  7. Enjoy!

Depending on the season I also like to add some cinnamon or vanilla to the oatmeal or top it off with some fresh berries. You could also add some almond or other nut crumbles to the mixture. If you're in for some more chocolaty oatmeal you could also add in some extra chocolate chunks in order to make it even better!

If you want some more flavor for your eggs you could also add some onions and braise them lightly before adding the egg mixture to the pan. Or maybe add some fresh chives with the parsley for some additional flavor.
